Pasta di Patate with radicchio and Speck

Ingredients for 2/3 persons
- 500 g Pasta di Patate
- 2 stems of late Treviso radicchio
- 4 thin slices speck
- 2 spoonfuls olive oil
- 2 spoonfuls Parmesan cheese
- salt and pepper
Heat the olive oil in a frying pan and fry the radicchio very quickly to a golden brown. Add the speck, previously cut into small pieces, and immediately remove from the heat. Boil the gnocchi, drain and add them to the radicchio and speck, put back over the heat and sprinkle with the Parmesan cheese, pepper and serve immediately.
