The best recipe for

Potato rigatoni with courgettes and grana cheese flakes

Ingredients for 2 people

  • 400 gr potato rigatoni

  • 2 fresh courgettes, better if with blossom

  • onion

  • 20 gr of pinenuts

  • 20 gr of grated parmigiano reggiano cheese

  • grana flakes
  • salt and pepper  - to taste

  • oil - to taste
Preparation:   10 minutes - 2 servings -

Cut the courgettes in thin slices, cook them in a pan with fried onion for some minutes. Pour the courgettes in a bowl, add pinenuts, grated parmigiano reggiano cheese and oil. Mix everything and add a little salt. Open the Rigatoni pack  and pour them in a pan with a little water. Cook them for few minutes, take them off from fire and add the courgettes pesto. Put them in a plate, add the grana flakes and garnish the dish with courgettes blossoms .
